- 1 Bag Vegan Mini Marshmallow (10 Oz)
- 4 Tbsp Kapthura Extra Virgin Coconut Oul
- 3 Tbsp Coconut Milk
- Tsp Vanilla
- 5 Cups Rice Crispy Cereal
- Over medium heat, melt the coconut oil in a large pot.
- Add marshmallows and stir until almost fully melted.
- Before marshmallows are fully melted (there should be some lumps still but not too big), remove from heat and coconut milk and vanilla.
- Gradually stir in rice crispy cereal and fold until combined.
- Add to an 8″ x 8″ pan greased with coconut oil.
- Allow the treats to cool and firm up (place in the fridge for faster results).
- Cut in squares and serve. Enjoy!
